Bagna Cauda Day will return this year for its thirteenth edition on 21, 22, 23 November and 28, 29, 30 November 2025, with the second edition of “Bagna della Merla” scheduled for 28 January to 1 February 2026.
This typical dish of Piedmontese tradition is at the heart of a gastronomic system which, starting with a hot sauce of garlic, oil and anchovies in which to dip seasonal vegetables, has become a pillar of convivial culture.

Each restaurant has its own page indicating available seats, contact details and the type of bagna cauda, identified by the famous traffic light system:
Red for the classic version “as God intended”
Yellow for the “heretical” version, with diluted garlic
Green for the “atheist” version, without garlic
It is also possible to order the “Sporta a ca”', a takeaway bagna cauda ready with all the vegetables. The reference price remains €30, with wine offered at €15 per bottle. Some establishments also offer the “Bagna sovrana” or the “Finale in gloria” with truffles.
